Food And Health

Extra Virgin Olive Oil is one of the cornerstones of the Mediterranean diet due to its health benefits. Its high content of oleic acid makes it more resistant to high temperatures, which is ideal for frying. As well as oleic acid, olive oil contains significant amounts of monounsaturated fats, which have been linked to a reduction in heart disease. It also contains antioxidants and other anti-inflammatory nutrients that reduce levels of bad cholesterol, fight free radicals and prevent premature aging.

Benefits Of Olive Oil:

  • Prevents mental deterioration.
  • Has anticancer properties, thanks to Oleocanthal.
  • Fights Diabetes.
  • Strengthens the immune system.
  • Lowers blood pressure.
  • Reduces frizz and dryness of hair.

Standard of our Extra Virgin Olive oil

Acidity: Acidity measures the freshness of the fruit at the period of harvest. Antologia Extra Virgin Olive Oils Envero starts Mid-October, therefore our early harvest keeps the acidity levels to the minimum.

2015 Acidity Results: International Oleic Council 0.8 | Antologia 0.2 (4x better than the standard)

Peroxides: Oxidation of the fruit could affect the taste of the olive oil. At Antologia, we reduce to the maximum the oxidation levels, by having all our milling operations in-house, which means, it takes us minutes from picking up the fruit until the milling process, keeping the taste is as pure as possible. Therefore, the peroxides measure the production time.

2015 Peroxides Results: International Oleic Council 20 | Antologia 8.8 (Less than half the standard)

Ethil Esters: Production timing and efficiency affects the fermentation of the fruit, which we measure by Ethil Esters. Because we avoid storage of our olives in production, we do not compromise our olives with possible fermentation.

2015 Ethil Esters Results: International Oleic Council 40 | Antologia 2.9

Polyphenols: The health and nutritional benefits of the olive oil are measured by Polyphenols ( known as well as antioxidants). Higher levels indicate freshness. During Envero we pick up the fruit at the optimal point of maturity, highly increasing our antioxidant levels.

2015 Polyphenols Results: International Oleic Council 180 | Antologia 425 (2.3x better than the standard)

Mean of Fruitness: By organoleptic tests, we measure the "Mean of fruitness", understanding the fruit freshness. Our Premium extra virgin olive oil has 5 times higher than the norm.

2015 Mean of Fruit Results: International Oleic Council 0 | Antologia 5 (5x better than the standard)
