Acidity: Acidity measures the freshness of the fruit at the period of harvest. Antologia Extra Virgin Olive Oils Envero starts Mid-October, therefore our early harvest keeps the acidity levels to the minimum.

Peroxides: Oxidation of the fruit could affect the taste of the olive oil. At Antologia, we reduce to the maximum the oxidation levels, by having all our milling operations in-house, which means, it takes us minutes from picking up the fruit until the milling process, keeping the taste is as pure as possible. Therefore, the peroxides measure the production time.

Ethil Esters: Production timing and efficiency affects the fermentation of the fruit, which we measure by Ethil Esters. Because we avoid storage of our olives in production, we do not compromise our olives with possible fermentation.

Polyphenols: The health and nutritional benefits of the olive oil are measured by Polyphenols ( known as well as antioxidants). Higher levels indicate freshness. During Envero we pick up the fruit at the optimal point of maturity, highly increasing our antioxidant levels.
